It should be soaked for three to four hours at least Drain the urad dal after 3 hours and rinse it 2 to 3 times after that. After 3 hours, the urad dal will become light and large in size. Make a smooth paste by grinding the urad dal in a mixi. Add just enough water to make the texture smooth. Pour the mixture into a big bowl and add 3 cups of the Ragi powder. Ensure it is well combined and break up all the lumps. For fermentation, let it sit for 6 to 8 hours. Add salt and water to the batter and mix well. The Ragi dosa batter is ready for making crispy Dosas.
